Edit Notifications From: email address

By using my email address as the sender as well as the recipient for notifications, they will always end up in my spam trap so I'll never see them. In doing this it violates two huge rules for spam:
1) Your server is not authorized as a sender in my SPF rules or anyone else's who is using SPF.
2) Any message where the sender and recipient is the same is considered spam.

Is it possible to have the notification emails come from a valid address @simplecms.com? It needs to be a valid address or the spam filters will detect that and treat it as spam then also.
